Rösti

recipe from the Swiss German part

(for 4 people)

1 litre water
1 tea spoon salt
1 kg potatoes

Put potatoes into cold water and bring to the boil. Allow to cook for approximately 20 minutes. Drain the water and leave potatoes to cool down. Take the cold potatoes, peal them and grate them coarsley (Rösti grater).

2.5 table spoons butter, heat the butter in a frying pan, add the grated potatoes
0.75 tea spoon salt, sprinkle over potatoes, slowly browning and very occasionally stir the potatoes gently at low temperature, then flatten carefully forming a pie, cover and let brown for 15 minutes.
1 table spoon butter, let it melt around the inside of the pan, wait another 5 minutes and cover it with a plate turning the Rösti upside down onto this plate.
